Pepperoni and garlic puree

Ingredients for 4 servings:

  • 300 g pepper
  • 6 garlic cloves
  • 100 ml olive oil
  • 50 ml white wine vinegar
  • 1 tsp sugar
  • 1 tsp salt

Instructions

Working time approx. 1 hour; Total time approx. 1 hour

Wash and chop the peppers. Peel and chop the garlic. Sauté both in a pan with olive oil, then deglaze with vinegar. Add sugar and salt, cover, and simmer over low heat for 30 minutes, stirring frequently. Blend thoroughly with a blender and bring to a boil briefly. Pour into clean jars with screw-top lids and refrigerate until ready to serve. Tip: Serve the purée with a sprig of finely chopped thyme.
