Ingredients for 4 servings:
- 1 ½ kg potatoes, finely grated
- 3 tbsp flour
- 3 eggs
- 1 cup of sour cream (150 – 200 ml)
- e.g. salt and pepper
- n. B. Spice(s) of your choice
- 200 g diced ham
- n. B. Grated cheese of your choice

Low-fat potato pancakes
Combine the grated potatoes with flour, sour cream, eggs, and seasonings, then add the ham. Line two baking sheets with parchment paper. Divide the dough, place it on the sheets, spread it thinly, and sprinkle with cheese. Bake in a preheated oven at 190°C (top/bottom heat) for about 20-30 minutes. Place both sheets in the oven at the same time, swapping them halfway through the baking time—top for bottom and bottom for top. It should be nice and crispy and lightly browned on the outside.
