Ingredients for 10 servings:

  • 100 ml oil (olive oil)
  • 2 cloves garlic
  • 100 g fresh basil
  • 1 tbsp cheese (Peccorino), Italian hard cheese
  • 1 tbsp pine nuts
  • Salt
  • pepper
  • 40 g butter

Pesto is an absolute MUST for all Mediterranean gourmets. Whether on tomato and mozzarella slices, in pasta, on pizza, baked with meat, fish, or shellfish, or with freshly baked white bread, “basil paste” is a special treat. Clean the garlic cloves. Wash the basil and remove the leaves from the stem (the stem is very stringy, and blending won’t break them down). Toast the pine nuts in a little butter for a stronger flavor. Cut the pecorino (or Parmesan cheese) into machine-sized pieces. Now, blend all the ingredients. Optionally, you can add the oil gradually to achieve the right consistency. It’s best to pour the mixture into a sealable jar and drizzle with a little olive oil to help the pesto keep longer.
