Pickled Gouda with pink peppercorns

Ingredients for 4 servings:

  • 3 garlic cloves
  • 250 g cheese (young Gouda), in one piece
  • 300 ml oil, neutral (e.g. sunflower oil)
  • 1 tbsp pepper berries, pink, pink

Instructions

Working time approx. 5 minutes; Rest period approx. 1 day; Total time approx. 1 day 5 minutes

Peel and halve the garlic cloves, then place them in a bowl with the oil and pink peppercorns. Dice the Gouda and marinate it in the seasoned oil. Let it sit for at least a day before serving so the garlic can impart its flavor to the oil. It tastes best when you always eat a piece of cheese with a peppercorn! This recipe is a great way to use up even unsightly Gouda edges.
