Ingredients for 3 servings:
- 6 fish fillets (matjes fillets)
- 1 onion(s), in rings
- 200 ml vinegar (white wine/sherry)
- 150 ml water
- 5 tbsp sugar, (5-8 tbsp)
- 2 tsp mustard seeds
- 2 tsp all-spice
- 2 bay leaves
Instructions
Working time approx. 30 minutes; Rest period approx. 2 days; Total time approx. 2 days 30 minutes
Rinse the herring fillets thoroughly, pat dry, and cut into pieces (not too small). Bring the vinegar, water, sugar, spices (if the seeds bother you, place them in a paper tea strainer and discard before eating), and the sliced onion to a boil, then simmer over low heat for another 5-10 minutes. Let the stock cool slightly and pour over the fish. Let it marinate for at least two days. Serve with crispy fried potatoes. Tip: It’s worth using a good vinegar. This amount is calculated as a main course for three people, or for several as small snacks (for a hangover breakfast!).
