Pickled sheep's cheese

Ingredients for 6 servings:

  • 1 m.-sized onion(s)
  • 5 garlic cloves
  • 1 sprig(s) rosemary
  • 2 sprigs of thyme
  • 10 tbsp olive oil
  • Black pepper, coarsely ground
  • 500 g sheep’s cheese

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

ideal for the barbecue season or as a starter to Greek food.

Dice the onion medium-finely. Peel the garlic cloves and halve them lengthwise. Roughly tear the rosemary and thyme. Mix these ingredients with the olive oil (or more to taste) and the pepper. Dice the feta cheese and add it. Let it sit in the refrigerator overnight. Remove it from the refrigerator in plenty of time before serving so it can come to room temperature. It’s best to remove the garlic cloves or warn family members/guests – if you grab a clove and bite into it, it’s incredibly hot! Tastes great with flatbread, tzatziki, olives, farmer’s salad, pickled peppers, gyros…
