Ingredients for 1 servings:

  • 200 g marzipan
  • 115 g sugar
  • 2 egg whites
  • 5 tbsp flour
  • 1 bag of vanilla sugar
  • 100 g pine nuts
  • Powdered sugar for dusting

Working time approx. 15 minutes; Cooking/baking time approx. 12 minutes; Total time approx. 27 minutes

Italian marzipan cookies with pine nuts

Combine the sugar and marzipan in a food processor. Add the egg whites and vanilla sugar and mix again. Roughly chop 30g of pine nuts in a freezer bag. Mix the crushed pine nuts and flour with the marzipan mixture. Scoop out portions of dough with a tablespoon, place them on a baking sheet lined with baking paper, sprinkle with pine nuts, and press them down lightly. Bake the cookies in a preheated oven at 180°C (top/bottom heat) for 12-14 minutes until not too dark. Let the pine nuts cool and dust with powdered sugar.
