Ingredients for 4 servings:

  • 2 large zucchini
  • 8 slices of Parma ham
  • 75 g cream cheese with garlic
  • some arugula
  • some olive oil
  • some parsley, chopped
  • 1 bunch of chives
  • Salt

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 8 minutes; Total time approx. 28 minutes

Antipasti

Cut the zucchini lengthwise into 8 not-too-thin slices. Mix olive oil with a little parsley and salt. Brush the zucchini slices with it on both sides and grill briefly. Remove the zucchini from the grill, let it cool slightly, and then spread with cream cheese. Place a slice of Parma ham and a few arugula leaves on each slice. Blanch the chives in boiling water and then rinse with cold water. Roll up the zucchini slices, wrap the chives around them, and tie a knot.
