Pigtail mares
- 250 ml Milk, lukewarm
- 15 g Yeast, fresh
- 600 g Wheat flour 550
- 1 tsp Salt
- 75 g Raw cane sugar
- 50 ml White wine
- 1 Egg yolk
Pigtail mares
- Put the lukewarm milk, yeast and raw cane sugar in a bowl and stir. Add wheat flour, salt and white wine. Then knead everything together. Cover and put in a warm place. Let rise for about an hour until it has doubled.
- Then take the braid batter out of the bowl and divide into three portions. Process these into three strands and then braid them into a braid. Place on the baking sheet and brush with whisked egg yolk. Cover and let rise again in a warm place for about 20 minutes.
- Preheat the oven to 180 degrees top / bottom heat. When it is preheated, slide it into the 2nd rail from the bottom. Now bake for 30 minutes. Then take it out and let it cool on a rack.
