Pigtail mares

  • 250 ml Milk, lukewarm
  • 15 g Yeast, fresh
  • 600 g Wheat flour 550
  • 1 tsp Salt
  • 75 g Raw cane sugar
  • 50 ml White wine
  • 1 Egg yolk

Pigtail mares

  1. Put the lukewarm milk, yeast and raw cane sugar in a bowl and stir. Add wheat flour, salt and white wine. Then knead everything together. Cover and put in a warm place. Let rise for about an hour until it has doubled.
  2. Then take the braid batter out of the bowl and divide into three portions. Process these into three strands and then braid them into a braid. Place on the baking sheet and brush with whisked egg yolk. Cover and let rise again in a warm place for about 20 minutes.
  3. Preheat the oven to 180 degrees top / bottom heat. When it is preheated, slide it into the 2nd rail from the bottom. Now bake for 30 minutes. Then take it out and let it cool on a rack.
