Ingredients for 4 servings:

  • 4 thick fish fillets (pike fillets)
  • 3 tbsp lemon juice
  • 3 tbsp oil
  • salt and pepper
  • 40 g butter
  • 50 g shallot(s), chopped
  • 4 peppercorns
  • 1 bay leaf
  • 200 g sour cream
  • 2 tbsp Parmesan, grated
  • 1 tbsp breadcrumbs
  • 50 g butter for butter flakes

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Marinate the pike slices with lemon juice, oil, salt, and pepper. Melt the butter in an ovenproof dish and sprinkle with the shallots. Place the pike slices in the dish, interspersing them with the peppercorns and bay leaf pieces. Cover the dish with aluminum foil, place in a preheated oven at 200°C, and roast the fish for 10 minutes. Remove the aluminum foil. Mix the sour cream with the Parmesan cheese and pour over the pike slices. Sprinkle with parsley and breadcrumbs, and top with butter flakes. Increase the oven temperature to 220°C and bake the fish for 10-15 minutes, until cooked through and lightly browned. Serve in the dish. Side dishes: toasted baguette or potatoes, stir-fried vegetables.
