Ingredients for 1 servings:
- 1 large pineapple, diced
- 1 large sweet potato(s), diced
- 3 onions, finely diced
- 200 g brown sugar
- 200 g vinegar, light
- 1 small chili pepper(s)
- 2 tbsp salt
- 1 tsp, heaped cinnamon
- 1 tsp, heaped turmeric
- 1 cm ginger
- 5 grains of allspice
Instructions
Working time approx. 20 minutes; Cooking/baking time approx. 1 hour; Total time approx. 1 hour 20 minutes
Combine all the finely diced ingredients in a large pot along with the sugar, vinegar, and spices. Bring to a boil briefly, then simmer on low heat for a good hour. Add a little water occasionally if necessary. Then, blend the chutney with a hand blender before pouring it into the prepared jars while still hot. This quantity makes approximately five large jars. Note: The chutney can be eaten as a spread or as a side dish with meat, pasta, etc.
