Ingredients for 1 servings:
- 250 g butter
- 4 eggs
- 250 g sugar
- 300 g flour
- 1 packet of baking powder
- 1 lemon(s), grated peel
- 1 can pineapple, chunks, well drained
- 100 g desiccated coconut
- Grease for the tray
Instructions
Working time approx. 15 minutes; Total time approx. 15 minutes
for a tray or a large mold
Cream the softened butter with the eggs and sugar until fluffy. Stir in the flour, baking powder, and lemon zest. Spread the batter onto a greased baking sheet, arrange the pineapple pieces on top, and sprinkle with desiccated coconut. Bake at 200°C for 20-25 minutes.
