Ingredients for 4 servings:

  • 1 pineapple
  • 1 lemon(s), untreated
  • ½ bunch basil and some for garnishing
  • 75 g sugar
  • 4 scoops of vanilla ice cream, more if desired

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Peel the pineapple, remove the core, and cut the pineapple into approximately 3 mm thin slices. Zest the lemon, then squeeze the lemon. Rinse the basil, shake it dry, and pick off the leaves. Arrange the pineapple slices on dessert plates and drizzle with a little lemon juice. Purée the basil and sugar in a blender and spread it over the pineapple slices. Scoop the vanilla ice cream into balls and arrange two balls on top of each. Garnish with some basil and lemon zest and serve immediately.
