Ingredients for 1 servings:
- 4 m.-sized eggs
- 4 tsp sugar
- 1 tsp salt
- 8 tbsp flour
- 1 tsp baking powder
- 100 ml pineapple juice
- 100 ml carbonated mineral water
- 8 tbsp pineapple pieces
- e.g. fat for the pan
Instructions
Working time approx. 10 minutes; Rest time approx. 1 hour; Cooking/baking time approx. 20 minutes; Total time approx. 1 hour 30 minutes
for 4 pancakes
Beat the eggs with the sugar and salt until frothy. Combine the flour and baking powder and sift over the egg mixture. Add the pineapple juice and mix everything into a creamy batter. Add the mineral water and beat the batter again. Let the batter rise in the refrigerator for about 1 hour. Heat a pan with a little fat. Pour some batter into the pan and scatter 2 tablespoons of pineapple chunks on top. Cover the fruit with batter and cook the pancakes until golden brown on each side. Continue baking for 3 more pancakes.
