Pineapple wedges with mint sugar pesto

Ingredients for 4 servings:

  • 1 pineapple, fresh
  • 100 g sugar
  • 1 bunch mint, fresh

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Peel the pineapple all around, then quarter it. Cut out the core down the middle and slice the quarters lengthwise into thin slices. Arrange the pineapple slices side by side on a platter. Pluck the mint leaves from the stems and crush them with the sugar in a bowl or mortar to create a crumbly pesto. Sprinkle this mixture over the pineapple. A very simple and refreshing, light dessert. Perfect for summer. Also delicious as dessert at your next barbecue.
