Ingredients for 4 servings:
- 1 kg jacket potatoes (from the previous day)
- 300 g wheat flour (mix white and wholemeal flour as desired)
- 1 egg(s)
- 1 tsp salt
- 1 tsp low-fat curd cheese
- 1 pinch(s) nutmeg, freshly grated
- Clarified butter
Instructions

delicious and hearty side dish
Peel and finely grate the potatoes from the previous day. Mix with flour, egg, salt, low-fat quark, and nutmeg and knead into a cohesive, not too dry dough. Form the dough into a log about 10 cm in diameter and cut into thumb-thick slices. Roll each slice in flour one at a time and roll out to a thickness of about 2 to 3 cm. Dust the rolled out dough again with flour, place it on a board, and cut it into diamonds measuring about 2 x 3 cm. Heat a little clarified butter in a frying pan and carefully slide the potatoes from the board into the pan. Fry the potatoes for a few minutes on both sides until golden brown. They go well with spinach and scrambled eggs, for example.
