Ingredients for 1 servings:

  • 150 g flour
  • 100 g sugar
  • 1 packet of vanilla sugar
  • 1 pinch of salt
  • 50 g pistachios, ground
  • 50 g ground almonds
  • 1 drop of lemon flavor, possibly more
  • 1 lime(s) (organic), zest
  • 1 egg yolk
  • 100 g butter, soft
  • 150 g powdered sugar
  • 2 tbsp water
  • 1 tbsp lime juice
  • possibly powdered sugar for dusting

Instructions

Working time approx. 50 minutes; Rest time approx. 2 hours; Cooking/baking time approx. 10 minutes; Total time approx. 3 hours

Crispy cookies with pistachios and a hint of lime, makes about 40 pieces

Knead the flour, sugar, vanilla sugar, salt, half the pistachios, the almonds, 1-2 drops of lemon flavoring, half the lime zest, the egg yolk, and the butter together to form a dough, then cover and chill for 1-2 hours. Preheat the oven to 175°C (top/bottom heat) and roll out the dough in portions between two freezer bags or foil to a thickness of 1/2 cm. Use a cookie cutter to cut out Christmas trees about 6 cm in size. Place on baking sheets lined with baking paper and bake for 8-10 minutes. Remove the cookies from the tray and let cool. Mix the powdered sugar with the water until smooth, then stir in the remaining lime zest and juice. Brush the mixture onto the Christmas trees and sprinkle with the remaining pistachios. Dust unglazed Christmas trees with powdered sugar, if desired.
