Ingredients for 1 servings:

  • 125 g flour
  • 30 g rice flour
  • ¼ tsp baking powder
  • ½ tsp salt
  • 2 tsp orange peel, untreated, grated
  • 20 g pine nuts, finely chopped
  • 20 g pistachios, finely chopped
  • 3 tbsp vegetable oil
  • 100 g natural yogurt
  • 1 egg white, lightly beaten
  • some pepper, black from the mill
  • Flour for the work surface

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Preheat the oven to 180°C. Sift the flour, rice flour, baking powder, and salt into a bowl and mix with the orange zest, pine nuts, pistachios, and some freshly ground black pepper. Add the oil and yogurt and knead into a smooth dough. Form into a ball and roll out thinly on a floured surface. Cut out squares or circles from the dough. Place the crackers on a baking sheet lined with baking paper, brush with egg white, and bake for about 15 minutes. Cool on a wire rack. Delicious with cheddar, crème fraîche, or smoked trout.
