Ingredients for 4 servings:

  • 1 kg tomatoes, fully ripe
  • 1 large onion(s)
  • 2 garlic cloves
  • 1 tsp tomato paste
  • 1 tbsp olive oil
  • Cayenne pepper or Tabasco
  • Salt

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

without ketchup, only with tomatoes

Score the tomatoes, briefly pour boiling water over them, and peel them. Remove the stems and seeds. Finely chop the onion, garlic cloves, and tomatoes. Heat the oil, fry the tomatoes, onion, and garlic. Add tomato paste. Season with salt and pepper. Simmer on low heat for about 30 minutes. Strain or blend the sauce. If the sauce is too thin, reduce the sauce accordingly. If desired, add sugar, honey, and balsamic vinegar to taste.
