Ingredients for 3 servings:
- 500 g flour
- 50 g durum wheat semolina
- 1 packet of fresh yeast
- some honey
- 4 tbsp olive oil
- 1 ½ tsp salt
- 300 ml water, lukewarm
- 250 g Cheddar cheese
- e.g. tomato sauce, thick, for pizza, homemade or bought
- e.g. Gouda or Emmental, grated
- e.g. cocktail tomatoes
- 2 onions, red
- 1 bunch arugula
- 1 pack sour cream
- some Parmesan, freshly grated
- e.g. barbecue sauce
- 1 small can of corn
- 1 can of baked beans
- 1 package of bacon
- e.g. Tabasco
- olive oil
- 1 garlic clove(s)
Instructions
Working time approx. 30 minutes; Rest time approx. 30 minutes; Cooking/baking time approx. 8 minutes; Total time approx. 1 hour 8 minutes
For the dough: Mix the flour and durum wheat semolina in a bowl. Make a well in the dough and crumble in the fresh yeast. Drizzle a little honey over the flour and carefully pour in lukewarm water. After a few minutes, the yeast will begin to rise and bubble. Add the olive oil and beat the mixture with a hand mixer. Now add the salt and knead the mixture into a smooth dough. Knead thoroughly and let it rise in a warm place for about 30 minutes. For the cheese crust, cut the cheddar into long pieces. Once the dough has risen, divide it into about 3 pieces, roll it out, and spread the sliced cheddar around the edges of each piece. Fold the excess cheese over the cheese and press it down firmly to prevent it from leaking out during baking. Crush the garlic and mix with the oil. For the arugula topping: Slice the tomatoes, slice 1 red onion into rings, grate the Parmesan cheese, and wash and sort the arugula. Place the dough on a pizza pan previously brushed with garlic oil. Lightly spread the pizza sauce over the pizza base, sprinkle with Gouda or Emmental cheese, top with tomato slices, and sprinkle with onion rings. Place the pizza in the oven preheated to 250 degrees Celsius (480 degrees Fahrenheit) and bake for 7-8 minutes. When the crust is nicely browned and the cheese is melting, remove the pizza from the oven, top with arugula, dollop with sour cream, and sprinkle with Parmesan cheese. Brush the cheese crust with garlic oil. For the barbecue topping: Slice the second onion into rings. Place the dough on a pizza pan previously brushed with garlic oil. Spread some barbecue sauce over the pizza base, top with bacon, corn, baked beans, and onions, drizzle with Tabasco to taste, and sprinkle with grated cheese. Place the pizza in the oven preheated to 250 degrees Celsius (480 degrees Fahrenheit) and bake for 7-8 minutes. When the crust is nicely browned and the cheese is melting, remove the pizza from the oven. Brush the cheese crust with garlic oil.
