Ingredients for 12 servings:

  • 250 g flour
  • 3 tsp baking powder
  • 2 tsp herbs, Italian
  • ½ tsp paprika powder
  • ¼ tsp salt
  • 1 tomato(s)
  • 1 bell pepper(s)
  • 1 onion(s)
  • 1 pack of salami (ww, 80 g)
  • 3 tbsp olive oil
  • 2 eggs
  • 200 ml buttermilk
  • 70 g grated cheese up to 30% fat

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Preheat oven to 180°C fan/convection oven. Cut the tomato, onion, bell pepper, and salami into small pieces. Combine the flour, baking powder, herbs, paprika, and salt in a bowl. In another bowl, combine the oil, eggs, and buttermilk (start with 200ml). Add the flour mixture, bell pepper, tomato, onion, salami, and grated cheese and mix well. Depending on the consistency, add more buttermilk if desired. Pour the batter into a silicone muffin tin and bake for about 30 minutes.
