Ingredients for 3 servings:

  • 1 pack of pizza dough, chilled, on baking paper
  • 2 packs of mozzarella
  • 400 g cherry tomatoes
  • 1 bunch of spring onions
  • 2 garlic cloves
  • 3 tbsp olive oil
  • salt and pepper
  • Chili, as desired
  • 12 basil leaves, to serve as desired

Small pizza from the muffin tin – easy to prepare or for surprise visitors

Cut the cherry tomatoes into approximately 3-5 slices (not too thin). Quarter the mozzarella lengthwise and cut into slices of a similar size/thickness to the cherry tomatoes. Finely slice the spring onions. Crush the garlic cloves and mix with the olive oil (and a little chili, if desired). Grease the muffin tins. Roll out the pizza dough and the baking paper. Using a round cutter, cut out circles that are half the diameter of the muffin cups. Divide the dough slices among the muffin tins, making sure the dough reaches the edges. Alternate the cherry tomatoes and mozzarella tightly on top, sprinkle with spring onions. Season well with salt and pepper. Drizzle with the garlic oil. Bake at 200°C (preheated) on the second rack from the bottom for 15 minutes. Remove from the pans, place a basil leaf in/on each pizza, and serve. Delicious hot or cold.
