Plaice fillets on toast with homemade mayonnaise

Ingredients for 4 servings:

  • 1 egg yolk
  • 2 tbsp vinegar (herbal)
  • 1 tsp mustard, medium hot
  • 125 ml oil (salad oil)
  • 1 tbsp chives
  • 1 tbsp tomato ketchup
  • Salt, sugar
  • 500 g fish fillet(s) (plaice fillets)
  • 30 g flour
  • 6 tbsp oil
  • 4 slices of toast

Working time approx. 30 minutes; Total time approx. 30 minutes

For the mayo: Whisk the egg yolks with vinegar, mustard, salt, and sugar. Slowly stir in the salad oil. Add the chives and ketchup. Cut the fillets into 3 cm pieces, season with salt and pepper, and coat in the flour. Fry in the cooking oil for 2-3 minutes until light brown and keep warm. Toast the toast, spread the fillets on the toast, and drizzle with the mayo.
