Ingredients for 4 servings:
- 300 g rice (Sadri rice*), alternatively basmati rice
- 175 g broccoli
- 6 tbsp oil (linseed oil), alternatively other vegetable oil
- 2 onions
- 225 g mushrooms, possibly also porcini mushrooms
- 2 cardamom pods, crushed
- 6 cloves
- ½ tsp black peppercorns
- 1 stalk(s) cinnamon
- 1 tsp turmeric
- 1.2 liters of vegetable broth
- salt and pepper
- 100 g raisins or sultanas
- 150 g pistachios, shelled, chopped and unsalted
Instructions
Working time approx. 15 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 35 minutes
Azerbaijan Style
Chop the onions and mushrooms. Sauté the onions in oil in a pot for about 3 minutes until translucent, stirring vigorously. Add the mushrooms, rice, garlic, and spices and cook for 1 minute, stirring occasionally, until the rice is coated with oil. Meanwhile, boil the broth and add it to the pot, seasoning with salt and pepper. Cut the broccoli into florets and add it. Cover, reduce the heat, and simmer for about 15 minutes. Do not remove the lid to prevent the food from drying out. Remove the pot from the heat and let it rest, covered, for another 5-10 minutes. Add the raisins and pistachios, lightly fluffing the rice mixture with a fork. *From the Persian specialty store.
