Plum and shallot chutney

Ingredients for 1 servings:

  • 1 kg plum(s)
  • 100 g ginger
  • 500 g shallot(s)
  • 350 g brown sugar
  • 4 tbsp oil
  • 500 ml vinegar (red wine vinegar)
  • Salt
  • Cayenne pepper

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Wash the plums, halve them, and remove the stones. Peel the ginger and shallots, finely dice them, and fry them in hot oil until translucent. Then add the plums and sauté briefly. Add the brown sugar and stir until melted. Season with salt and cayenne pepper. Pour in the vinegar and simmer over low heat for about 60 minutes, stirring occasionally. Season to taste, then ladle the chutney into prepared jars and seal tightly. This chutney goes well with game or grilled meats.
