Plum Applesauce Cake
The perfect plum applesauce cake recipe with a picture and simple step-by-step instructions.
For approx. 24 pieces:
- 1,2 kg Plums
- 125 g Lowfat quark
- 100 ml Milk
- 100 ml Oil
- 100 g Sugar
- 1 pinch Salt
- 350 g Wheat flour type 405 or 550
- 1 packet Baking powder
- 250 g Sour cream
- 500 g Applesauce, out of the jar or homemade
- 1 packet Vanilla pdding powder
- 100 g Quince jelly or wild berry jelly
- Wash the plums, cut in half with a knife, remove the seeds and drain on a sieve.
- Preheat the oven to 190 ° C (fan oven: 170 ° C).
- Mix the quark, milk, oil, 75 g sugar and a pinch of salt with the dough hook on the hand mixer. Mix flour with baking powder, add and knead in. Roll out the dough evenly on a greased baking sheet (drip pan, 30 x 30 cm) sprinkled with flour.
- Mix the sour cream with applesauce, custard powder and remaining sugar, spread on the dough. Top with the plums. Bake in the preheated oven on the lowest rack for about 35-40 minutes.
- Bring the jelly to the boil. Brush the hot plums with it. Let the cake cool lukewarm on a wire rack.
- Tip 6: Quark oil dough doesn’t like to wait for the fruit. Quickly cover the finished with fruit, otherwise the baking powder will already start its work and the bottom will not really loosen up.
