Obazda Leek Soup

The perfect obazda leek soup recipe with a picture and simple step-by-step instructions.

  • 2 small Leek sticks
  • 3 Carrots
  • 2 tablespoon Margarine
  • 2 tablespoon Flour
  • 1 bottle Wheat beer
  • 150 ml Milk
  • 250 ml Vegetable broth
  • 3 cups Obazda
  • Salt
  • Sweet paprika powder
  • Lye roll
  1. Clean the leek and carrots, wash in the middle, cut lengthways and cut into slices.
  2. Melt the margarine in a saucepan, add the carrots and leek and sauté. Dust with the flour and stir well.
  3. Now deglaze the whole thing with the wheat beer, milk and vegetable stock, bring to the boil and simmer for about 10 minutes.
  4. Add the obazda, let it melt and let it steep for about 10 minutes
  5. Cut the pretzel biscuits and roast them in a pan with a little bit of Eett
  6. Now put the soup on a plate and serve with the pretzel croutons and a pair of leek rings.
