Plum Cake with Whipped Cream

Ingredients
 

dough

  • 200 g Wheat flour type 550
  • 90 g Butter
  • 80 g Sugar
  • 1 Pc. Egg
  • 2 tbsp White wine
  • 1 pinch Salt

Covering

  • 700 g Plums, pitted
  • 40 g Sugar
  • 40 g Ground almonds

molding

  • 60 g Sugar
  • 2 St. Eggs
  • 1 St. Egg yolk
  • 250 ml Cream
  • 30 g Butter
  • 1 tsp Food starch

To sprinkle

  • 4 tbsp Breadcrumbs

Instructions
 

  • Make the dough and chill. See: Hackteig _ Shortcrust pastry
  • Wash the plums, cut them in half and stone them.
  • Grease and crumble baking pan (26 springform pan).
  • Mix the sugar, cinnamon and almonds. Mix the plums with it.
  • Sprinkle the cake base generously with breadcrumbs (2 - 3 tablespoons), then cover with the plums. Spread the rest of the almond / cinnamon sugar over the top.
  • Preheat the oven to 180 degrees.
  • For the topping, mix the 2 eggs and the egg yolks with the sugar.
  • Liquefy the butter in a small pan and sweat the cornstarch in it. Then take the pan off the heat and let it cool down a bit. Now gradually stir in the cream.
  • Gradually stir the cream butter into the egg / sugar liquid. Then spread as a topping over the plums.
  • Bake the cake in 40 minutes at 180 degrees. Let cool in the open oven.
