Plum compote with Amaretto and sweet quark

Ingredients for 4 servings:

  • 500 g plum(s)
  • 300 ml apple juice
  • ½ sachet of vanilla pudding powder
  • Amaretto
  • Cinnamon
  • Sugar
  • ½ tonka bean(s)
  • 1 vanilla pod(s)
  • 750 g quark
  • 2 vanilla pods
  • n. B. Amaretto
  • n. B. sugar
  • 1 lemon(s), zest and juice
  • 1 package of chocolate chip cookies

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 45 minutes

Stone the plums and dice them, then place them in a saucepan with the apple juice (so that it can simmer). Then bring to the boil with the vanilla pod, Amaretto, cinnamon, sugar and grated tonka bean and season to taste. Now mix the custard powder with Amaretto and add to the plums. Simmer until it thickens. Now prepare the sweet quark. To do this, scrape the seeds from the 2 vanilla pods, add to the quark and stir. Now add the sugar, Amaretto and lemon juice plus zest. The quark should taste sweet and fresh. Finally, layer everything in a glass. Add chocolate chip cookies to the bottom for a special crunch and as a topping.
