Plum dumplings

Ingredients for 4 servings:

  • 1 kg potatoes (floury)
  • 150 g flour
  • 1 egg(s)
  • 500 g plum(s), pitted (prunes)
  • 150 g sugar
  • 125 g butter
  • 1 pinch of salt

Instructions

Working time approx. 45 minutes; Total time approx. 45 minutes

Boil the potatoes the day before (jacket potatoes). Peel them, grate the potatoes, mix in an egg, a pinch of salt, and flour, and knead into a dough (add flour gradually until the dough reaches the desired consistency). Shape the dough into a roughly 5cm thick roll and cut into roughly 3cm long pieces. Roll these pieces out thinly into flatbreads about the size of a plate and brush with melted butter. Pit the plums and sprinkle with sugar. Distribute them among the dough discs and roll them up. Place them in a greased roasting tin or casserole dish. Place in an oven preheated to 200°C and bake for about 45 minutes, until the Maultaschen are the desired color. Brush with melted butter occasionally. Serve with cold milk.
