Plum marzipan ravioli

Ingredients for 4 servings:

  • 200 g flour
  • 1 pinch of salt
  • 150 g prunes, without stones
  • 1 tbsp apricot jam
  • 50 g marzipan – raw mass
  • 4 tbsp pistachios, chopped
  • 1 egg white
  • powdered sugar

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Knead the flour with 100 ml water and salt to form a dough. Cover with cling film and let rest for 30 minutes. Finely dice the prunes and drizzle with 2 tablespoons of water. Briefly heat the jam over low heat. Tear the marzipan into flakes. Mix the plums, marzipan, jam and 2 tablespoons of pistachios together. Roll out the dough thinly on a floured surface and cut into 12 squares. Place the filling in the center of each square. Brush the edges of the dough with egg white and fold diagonally. Press the edges together with a fork and lightly dust the ravioli with flour. Cook in plenty of boiling, lightly salted water for 8-10 minutes. Serve the ravioli with the remaining pistachios and powdered sugar. Serve with vanilla sauce. This recipe serves 4 people as a dessert. The ravioli also tastes great as a warm main course.
