Plum pancakes

Ingredients for 1 servings:

  • 10 plums or damsons or fruit of your choice
  • 3 tbsp, leveled flour
  • 2 tbsp milk
  • 1 egg(s), separated
  • 1 tsp vanilla sugar
  • n. B. sugar
  • e.g. cinnamon
  • some butter or oil

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 20 minutes

also with apples, berries or other fruits

Halve and pit the plums. Mix the flour (level tablespoons!), milk, vanilla sugar, and egg yolk into a smooth batter. Beat the egg whites until stiff and carefully fold them into the batter. Place the plums cut-side down in a hot pan greased with a little butter or oil and fry for about 1 minute. Spread the pancake batter on top, cover, and cook over low heat for about 4-5 minutes. Slide the pancake onto a plate and cook the other side for another 3-4 minutes. Serve on a plate and sprinkle with cinnamon and sugar, if desired.
