Plum pancakes

Ingredients for 4 servings:

  • 100 g flour
  • ¼ ml milk
  • 2 tbsp sugar
  • 3 eggs, separated
  • 250 g plums, pitted, quartered
  • 1 pinch of salt
  • Butter or margarine for the baking tray
  • 3 tbsp cinnamon sugar

Preheat the oven, including the baking tray, to 225°C. Whisk the flour and 1 tablespoon of sugar into the milk until smooth. Stir in the egg yolks. Let it stand for 10 minutes, then whisk again. Beat the egg whites with the pinch of salt and the remaining sugar until stiff peaks form. Remove the hot tray from the oven, grease it, pour the batter onto it, and smooth it out. Spread the pitted and quartered plums over the batter. Drop the beaten egg whites, tablespoon by tablespoon, onto the batter. Sprinkle with cinnamon sugar. Bake the pancake on the second rack from the bottom for 12 minutes. Roll up the hot pancake, cut into slices, and serve with vanilla ice cream or vanilla sauce.
