Ingredients for 1 servings:

  • 2 kg plum(s), small aromatic or plums
  • 1 liter red wine, dry (like Burgundy/Chianti)
  • 400 g cane sugar
  • 3 pieces of star anise
  • 6 cloves
  • 2 stalk(s) cinnamon, in pieces

Side dish to game dishes or as a dessert with vanilla ice cream

You’ll need 2-3 1-liter jars! Wash and dry the plums, halve them, and pit them. Bring the sugar and red wine to a boil in a saucepan, then remove the pan from the heat and let the wine-sugar mixture cool. Layer the plums, star anise pods, cloves, and cinnamon stick pieces in the preserving jars, alternating layers until 2 cm below the rim. Pour the red wine syrup up to 1 cm below the rim of the jars and seal tightly. Pasteurize for 30 minutes at 90°C.
