Poached salmon in sparkling wine and lime sauce

Ingredients for 2 servings:

  • 2 salmon fillets, each approx. 150g
  • 1 shallot(s)
  • 1 lime(s), juice
  • 125 ml sparkling wine, dry
  • Salt
  • Pepper, white
  • possibly dill or lemon thyme
  • 125 ml cream
  • Oil or butter

Working time approx. 15 minutes; Total time approx. 15 minutes

Salmon very uncomplicated, also suitable for other fish

Drizzle the salmon fillets with lime juice, season with salt, and pepper. Finely dice the shallot and sauté in the oil/butter. Deglaze with sparkling wine and reduce. Add the cream and reduce slightly. Add the salmon fillets and marinade to the simmering sauce, cover, and let simmer for 8-10 minutes, depending on the size. Season the sauce to taste and add dill or other herbs, if desired. Serve with tagliatelle, saffron rice or wild rice, a fine salad, or pan-fried vegetables (broccoli, snow peas), and the remaining sparkling wine.
