Pollo Fino with honey carrots and lemon

Ingredients for 4 servings:

  • 12 chicken drumsticks (Pollo Fino)
  • 1 kg carrot(s)
  • 1 lemon(s), organic
  • 1 sprig(s) rosemary
  • 6 tbsp soy sauce
  • 6 tbsp olive oil
  • 3 tbsp honey
  • salt and pepper

Working time approx. 15 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 45 minutes

Chop the rosemary, peel the carrots, and halve them lengthwise. 2. Mix the oil, honey, rosemary, and soy sauce. Marinate the Pollo Fino with it and let it marinate for two hours. Mix 1 tablespoon of honey with the remaining oil. Season with pepper and salt. Place the carrots and lemon slices in a baking dish and pour the marinade over them. Spread the meat on top (you can add half of the marinade if you like). Cook in a preheated oven at 180°C (convection oven) for about 25-30 minutes. Baguette or flatbread goes perfectly with it. Tip: We made a delicious salad with the carrot tops.
