Pollock fillet Italian style

Ingredients for 4 servings:

  • 1.2 kg fish fillet(s) (pollock, or alternatively redfish)
  • 250 g cocktail tomatoes
  • 3 balls of mozzarella
  • some olive oil
  • Balsamic vinegar – cream
  • salt and pepper
  • Spice mix (fish spice)

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 45 minutes

Brush a little olive oil into an ovenproof dish. Cut the pollock into nice-sized pieces and season generously with the fish seasoning. Place in the ovenproof dish. Thinly slice the tomatoes and arrange them generously on top of the fish. Season with pepper and the balsamic vinegar. Thinly slice the mozzarella using a mozzarella slicer or a sharp knife and arrange them on top of the tomatoes. Bake in a preheated oven at 200°C for about 25-30 minutes. Serve with potatoes, mashed potatoes, or ciabatta.
