Ingredients for 1 servings:

  • 1 large pomelo(s) (approx. 800-900g pulp after peeling)
  • 500 g gelling sugar (2:1)
  • ½ tsp citric acid

Peel the pomelo and remove any white residue (otherwise, it will be very bitter in the jam). Cut it into small pieces and place it in a saucepan with the sugar. Mash and let it steep for about an hour. Blend everything thoroughly with a hand blender and then bring to a boil. As soon as it starts to boil, add the citric acid. After about 5-10 minutes, test for setting. If it’s set, pour the hot jam into screw-top jars and turn them upside down. Pomelo jam is a sweet-bitter jam, perfect for anyone who likes grapefruit!
