PomPizz – The potato pizza

Ingredients for 4 servings:

  • 1,300 g potatoes, peeled
  • 250 g flour
  • 1 tbsp cornstarch
  • 1 egg(s), size L
  • 1 tbsp butter or margarine
  • 3 tsp rosemary, dried (fresh works too, of course)
  • 2 tsp salt
  • n. B. Pfeffer
  • n. B. Pizza seasoning
  • nutmeg
  • 1 onion(s), grated, or 1-2 tbsp onion granules/powder
  • 1 bell pepper(s), red
  • 4 tomatoes
  • 1 small jar of mixed mushrooms (you can also use your own, of course!)
  • 3 slices of cooked ham
  • 150 g Gouda, grated
  • ½ pkt. pasta sauce
  • salt and pepper

Peel the potatoes, cut into small pieces, and boil in salted water until tender (takes about 30 minutes). While the potatoes are cooking, wash the bell pepper, halve it, and deseed it. If you don’t like bell peppers, remove the skin using a vegetable peeler (also called a potato peeler). First, cut the cleaned bell pepper into strips, then into small pieces. Wash the tomatoes, halve them, and deseed them, then cut them into strips, and then into small pieces. Drain the mushrooms in a sieve or colander. Dice the cooked ham. Once the potatoes are tender, drain them, let them steam on a hot plate, and mash them with a potato masher (if you have a potato ricer, you can also use that). Place the mashed potatoes in a large mixing bowl, add the flour, cornstarch, egg, butter or margarine, and seasonings, and mix with the dough hook of a hand mixer until you have a smooth dough. A quick tip: The dough will be a bit thick and spreadable, but won’t roll out with a rolling pin! Preheat the oven to 225°C. Line a baking sheet with two layers of baking paper (roof tile-like) and spread the potato dough evenly (this works best with a spatula). Pre-bake the potato base (without any topping) for about 15 minutes. As soon as the potato mixture begins to firm up, remove it from the oven and spread it with the pasta sauce. Then add the remaining topping ingredients, season again with salt and pepper, and sprinkle with grated Gouda cheese. Reduce the oven temperature to 180°C and bake the potato pizza for another 30 minutes. The potato pizza is ready when the cheese has melted and is brown and crispy. If you want to be absolutely sure, you can also test it with a skewer, just like you would with a cake.
