Poppy seed and quark cake

Ingredients for 1 servings:

  • 320 g apples
  • 4 eggs
  • 1 pinch of salt
  • 750 g low-fat curd cheese
  • 175 g sugar
  • 1 packet of vanilla sugar
  • 50 g semolina
  • 1 lemon(s) (juice and zest)
  • 1 tsp baking powder
  • 1 pack of poppy seeds (250g)
  • 2 tbsp powdered sugar

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Grease a springform pan (26) and preheat oven to 175°C. Peel and roughly dice the apples. Separate the eggs, beat the egg whites with salt until stiff, and set aside. Whisk the quark with the egg yolks, sugar, vanilla, lemon juice, and lemon zest. Mix the semolina with the baking powder and stir in. Take 1/3 of the quark mixture and mix it with the poppy seed mixture. Divide the beaten egg whites equally between the two quark mixtures and fold in. Fold the apple pieces into the light mixture. Pour the light quark into the pan first, then the dark quark (2 layers). Bake for 70-80 minutes and let cool in the open oven.
