Poppy seed and sesame crackers

Ingredients for 1 servings:

  • 40 g sesame seeds
  • 40 g poppy seeds, ground
  • 40 g flaxseed meal
  • 10 g almond flour
  • 40 g Parmesan, freshly grated
  • ¼ tsp sweet paprika powder
  • some salt and pepper
  • 1 egg(s)
  • 50 ml water

Instructions

Working time approx. 5 minutes; Rest time approx. 30 minutes; Cooking/baking time approx. 35 minutes; Total time approx. 1 hour 10 minutes

Mix the sesame seeds, poppy seeds, flax seeds, and flour. Add the Parmesan cheese and paprika and season with salt and pepper. Mix with the egg and water to form a dough and let it rise for about 30 minutes. Line a baking sheet with paper and place the dough on it. Spread it out a little and sprinkle with the almond flour. Cover with another layer of paper and roll out thinly. Peel off the paper. Bake in an oven preheated to 180°C (convection oven) for about 10 minutes on the middle shelf. Remove and cut into small pieces. Bake for another 5 minutes. Separate the individual pieces and if they are still slightly moist, dry them for another 20 minutes at 100°C.
