- 500 ml milk

extra juicy and very tasty
Bring the milk, sugar, grated lemon zest, and butter to a boil, add the semolina, and let it simmer or swell for about 10 minutes. I always do this in the microwave so it doesn’t stick to the pan, but be careful; you have to stir frequently, otherwise the semolina forms a large lump that’s impossible to mix. This has happened to me before, so I simply used a hand blender and blended everything together. Then stir the ground poppy seeds into the semolina mixture and let it cool slightly. Finally, add the egg, but be careful here too: if the mixture is still too hot, the egg white will curdle, and that shouldn’t happen. This mixture is enough for one very large yeast plait, or I’d almost say two normal-sized ones if you don’t want quite so much filling.
