Pork Chop with Apple and Mustard Sauce

- 4 Pork chops
- 1 Apple
- 1 Shallot
- 350 ml Apple juice
- 1 tbsp Coarse mustard
- 1 tbsp Creme fraiche Cheese
- Salt
- Black pepper from the mill
- Oil
- 1 bunch Spring onions, cut into thin rings
- Peel, core and finely dice the apple. Finely dice the shallot as well. Preheat the oven to 160 degrees.
- Heat some oil in a pan and sear the chops on both sides, add a little salt and pepper and place in the oven so that they can finish cooking there.
- Now put the apple cubes and the shallot in the frying fat and sweat for about 3 minutes while turning and then deglaze with the apple juice, bring to the boil and then set to the lowest temperature and simmer for about 10-15 minutes. Then stir in the coarse mustard and creme fraiche and season with salt and pepper.
- Serve the chops with the sauce and sprinkle with the spring onion rings.
