Pork chops with herb crust

Spread the love

Ingredients for 3 servings:

  • 3 chops
  • 70 g butter, soft
  • 60 g white bread
  • 1 large garlic clove(s)
  • 1 handful of basil, parsley, chives, thyme, rosemary

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 35 minutes; Total time approx. 50 minutes

Preheat oven to 160°C (320°F) fan/gas mark 1. Season the chops on both sides with salt, pepper, and (optional) a meat seasoning. Briefly sear them on both sides. Place the chops in a baking dish in the preheated oven for about 25 minutes. The herb crust: Crumble the white bread in a blender. Add the softened butter (not melted) to the blender. Add all the herbs and the garlic clove, along with a pinch of salt and pepper, and blend briefly. The mixture should be spreadable like cream cheese. If it’s too runny, simply refrigerate it briefly. If it’s too hard, add a little more softened butter. After 25 minutes of baking, remove the chops from the oven and reduce the oven temperature to 200°C (400°F). Spread the herb mixture evenly over the chops and press down firmly. Now bake the chops for another 10 minutes, until the crust turns slightly golden brown.
