Pork chops with tomatoes and garlic

Ingredients for 4 servings:

  • 4 pork chops
  • 250 g tomatoes, in pieces
  • 1 ½ tbsp oregano, fresh
  • 3 garlic cloves
  • 100 ml red wine
  • 2 tbsp tomato paste
  • 3 tbsp olive oil
  • Salt
  • black pepper, freshly ground

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 35 minutes

Finely slice the garlic cloves. Heat 2 tablespoons of olive oil in a pan. Add the chops and sear on both sides. Remove the meat, place it on a plate, and season with salt and pepper. Add the remaining olive oil to the pan and sauté the garlic. Add the oregano, red wine, and tomatoes. Bring to a boil, stirring occasionally until thickened. Season to taste with salt and pepper. Add the chops and any meat juices to the sauce, cover, and simmer over low heat for about 15 minutes. Turn the meat over once.
