Vegetables and meat in a pot

Ingredients for 4 servings:

  • 500 g lean pork
  • 2 tbsp olive oil
  • 1 onion(s)
  • 1 garlic clove(s)
  • 1 eggplant(s)
  • 2 small zucchini
  • 2 bell peppers, red and yellow
  • 5 tomatoes, peeled
  • 200 ml vegetable stock
  • e.g. salt and pepper
  • e.g. basil
  • e.g. oregano
  • some cream, amount as desired
  • some parsley, chopped

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 50 minutes

Cut the pork into bite-sized pieces (approx. 2 cm wide strips). Finely dice the onion and garlic, and slice the vegetables. Heat olive oil in a pan and sear the meat briefly on all sides. Reduce the heat slightly, add the diced onion and garlic, and fry lightly. Deglaze with the broth. Add the vegetables and seasonings to the meat and simmer in a covered pan over low heat for about 15 minutes. Add cream, if desired, and sprinkle with chopped parsley. We serve sesame patties as a side dish; noodles, rice, or simply bread also go well with the dish.
