Pork fillet al forno

Ingredients for 2 servings:

  • 600 g pork fillet(s)
  • ½ zucchini
  • 5 cocktail tomatoes
  • 1 ball of mozzarella
  • 1 pack of breakfast bacon
  • 2 tbsp oil
  • salt and pepper

Instructions

Working time approx. 25 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 45 minutes

Preheat the oven to approximately 180°C (fan). Wash the pork fillet, pat dry, and cut into 3-4cm thick pieces. Place on the cut side and wrap in bacon. Wash the zucchini and tomatoes. Cut the zucchini into thin slices and the tomatoes into slices. Drain the mozzarella and slice it as well. Heat the oil in a pan. Brown the pork fillet on each side for approximately 4 minutes. Season with salt and pepper. Place the browned pork fillet in a baking dish, top with a slice of zucchini, 2 slices of tomato, and 1 slice of mozzarella. Bake the whole thing in the oven for 15-20 minutes (depending on how well you like the pork fillet). We served it with fries/croquettes and a green salad.
