Pork fillet in banana curry sauce with tagliatelle

Ingredients for 4 servings:

  • 4 banana(s), ripe
  • 500 g pork fillet(s)
  • 500g tagliatelle
  • 1 cup sour cream
  • 200 ml cream
  • curry powder
  • Cinnamon
  • oil
  • ½ lemon(s), the juice
  • 1 pinch of spice mix (Asian spice mix)
  • 1 pinch(s) of saffron
  • salt and pepper

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Preheat the oven to 140 degrees Celsius (fan). Sear the pork fillet in a little oil on all sides, place it in a baking dish, insert a meat thermometer, and place it in the oven. After about 20 minutes, continue with the remaining steps, as the fillet needs about 45 minutes to reach an internal temperature of 60 degrees Celsius. Meanwhile, cook the noodles until al dente. Slice the bananas. Heat oil in a pan. Add the bananas, dust them thickly with curry, and fry over very low heat (on our stovetop, level 0.5) for about 10 minutes. Then add the sour cream, cream, cinnamon, saffron, Asian spice mix, and lemon juice, bring to a boil, and season with salt and pepper. The fillet should now be cooked through. Slice and serve on plates with the noodles and the banana curry sauce.
