Ingredients for 2 servings:
- 1 medium-sized pork fillet(s), (approx. 400g)
- 6 small shallots, cut into quarters
- ½ tbsp, strained mustard (herb mustard)
- 100 ml white wine
- 125 g crème fraîche with herbs
- Parsley, flat, cut into strips
- Basil, cut into strips
- 2 tbsp oil
- Sugar
- Salt and pepper, freshly ground black
Instructions
Working time approx. 25 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 35 minutes
Rub the fillet with salt and pepper and sear on all sides in hot oil. Add the shallots and sear. Brush the meat with mustard, add the wine, and simmer with the lid on for 10 minutes. Remove the meat and keep warm. Stir in the crème fraîche and season with salt, pepper, and a pinch of sugar. Simmer slightly, then add the herbs to the sauce and season again to taste. Slice the meat, divide it between two plates, and cover with the sauce. Serve with tagliatelle tossed in butter.
