Ingredients for 4 servings:
- 8 slice(s) pork fillet(s), 2 cm thick
- Sage, fresh
- Rosemary, fresh
- Salt and pepper, from the mill
- some clarified butter
- 4 sheets of puff pastry
- some herb butter
Instructions
Working time approx. 15 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 35 minutes

Slice the pork fillet and sear briefly on both sides in a pan in clarified butter. Add the herbs and season with salt and pepper. Place the puff pastry sheets on a baking sheet lined with baking paper, cut in half, and top each with a fillet. Spread the herbs from the pan evenly over the fillet slices and top each with a dollop of herb butter. Place everything in the oven preheated to 180°C for 15-20 minutes. The puff pastry wedges are ready when the puff pastry has risen nicely and taken on a nice brown color. Perfect for a New Year’s Eve/Christmas/birthday buffet.
